Abstract

This study examines the production of dairy products in North
Macedonia, with a focus on cheese diversity, relevant legislation, protection measures, and challenges faced by local dairy producers. Data were collected through the analysis of legislation, policy documents, state statistical office records, and national strategies. Additionally, the study reveals issues with meeting milk production’s quality and safety requirements.
