Background. Apple (Malus domestica) processing by-products, particularly peel and seeds, represent a significant source of bioactive compounds with potential applications in food and nutraceutical industries. This study evaluated and compared the mineral composition, total phenolic content (TPC), total flavonoid content (TFC) and antioxidant activity of apple peel waste and seeds. Mineral elements were quantified using Microwave Plasma Atomic Emission Spectroscopy (MP-AES), while TPC and TFC were determined by the Folin-Ciocalteu and aluminum chloride colorimetric methods respectively. Antioxidant activity was assessed using DPPH radical scavenging and FRAP assays. A statistical analysis was performed using one-way ANOVA followed by Tukey’s post hoc test (p < 0.05).
Results and conclusions. The results revealed significant differences between peel and seeds in all evaluated parameters. Apple peel waste exhibited higher levels of potassium (892.33 ± 14.15 mg/100 g DW), calcium (148.33 ± 1.53 mg/100 g DW) and sodium (24.17 ± 0.76 mg/100 g DW), whereas apple seeds showed relatively higher magnesium content (96.33 ± 1.53 mg/100 g DW). Regarding bioactive compounds, peel waste demonstrated significantly higher TPC (650.00 ± 1.00 mg GAE/100 g DW) and TFC (158.33 ± 2.08 mg QE/100 g DW) compared to seeds. Correspondingly, higher antioxidant activity was observed in peel waste, as indicated by DPPH inhibition (56.00 ± 2.65 %) and FRAP values (8.10 ± 0.10 mmol Fe²⁺/100 g DW). Overall, apple peel waste showed superior antioxidant potential, while seeds contributed notable mineral content. These findings highlight the potential valorization of apple byproducts as functional ingredients in sustainable food systems and circular bioeconomy applications.
