Abstract

Abstract: Quality control should enable them to explain the concepts and principles of quality control and distinguish the properties of materials and processes that are important for their quality in the food industry as part of the meat industry. The aim of the doctoral thesis under the heading - Application of quality control and the application of business models is to prove that the control is oriented towards the satisfaction and safety of customers, because the control homogenizes the production so that all products are equal and guarantee that the minimum control standards are met. The purpose of the application of quality control and application of business models will be to show the European standards that are applied, and to give an intellectual contribution in this doctoral thesis, to the guidelines that are applied according to all European directives and to be used in our food sector, especially in the meat industry in the Republic of North Macedonia. Through the business model for the application of quality control and the use of business models, make an effort to extract from foreign experiences the most sophisticated parameters and tools for innovation, competitiveness and competitiveness achieved through effectiveness and efficiency in the meat industry. Developing a responsible attitude towards quality control and application of business models, it will be possible to prepare reports on the performed quality control at each stage of production. The reports, correctly applied, should enable an assessment of whether the set requirements of the declaration/agreement/specification/standard from the
application of quality control and the application of business models have been met. This paper is the result of the working version of my doctoral dissertation with the same title.
