Abstract

The traditional food is a cultural inheritance, and for many rural areas its production and sale can be an important economic driver. The “Prespa cironki” are traditional dried fish product, characteristic of the Prespa region. They are obtained by drying the fish species Alburnus belvica. This specialty is found only in the southwestern part of Macedonia, more precisely around the Prespa Lake and villages Stenje and Konjsko. The tradition today is saved in Stenje where almost every household produces them, but only for domestic needs. When they are prepared during the summer period, the whole village smells in the widely known smell of dried fish. The product has a relatively long shelf life of around 2 years.
