Gastronomic animation in the Macedonian tourism deserves special attention in creating the content of the tourist stay, because gastronomy is one of the most important links that form the touristic offer of a destination. Gastronomic animation can contribute to the enrichment of the
offer in hotels and other types of catering facilities, supports and helps the development of gastronomic tourism in rural areas, has a strong impact on the discovery and promotion of new destinations, helps the development of small businesses, attracts large number of foreign tourists,
acts on the image of the country as a tourist destination, promotes the cultural heritage of the
country, enriches the social life through gastronomic events and festivals.
Nowadays, the number of tourists for whom gastronomy is motive to travel is permanently
increasing and through their involvement in gastronomic tours they influence the development of
tourism. These tours are extremely thematic and include visits to: traditional restaurants, ethno -
villages, vineyards and wineries, farmers and food markets, local shops where tourists have the
opportunity to get acquainted with the local gastronomy and taste authentic local food and drink,
visit at gastronomic events and food and drink festivals.
Considering the importance of gastronomic animation for tourism development, a question
arises: Are we familiar with the term gastronomic animation, how much is it represented in the
touristic offer, what activities does gastronomic animation contain, what is its impact on the
development of macedonian tourism?
The question posed in this way is a theme of research in this doctoral dissertation through which
answers will be obtained which will confirm the main and auxiliary hypotheses, which are that:
Gastronomic animation is not sufficiently scientifically treated and there is not enough
knowledge about it; Gastronomic animation is very little represented in the tourist offer, be it
from the aspect of a hotel or other catering facility, and beyond from the aspect of a tourist
destination; Gastronomic animation is an attractive animation content that can contribute to
attracting more tourists and give a great contribution to the development of macedonian tourism.
Gastronomic animation not only affects the quality of the integrated tourist product of the
destination, but also the products and services of catering facilities, tour operators or travel
agencies. The gastronomic animation largely depends on how the tourists will experience the
place, to what extent they will understand the local culture, what activities they will undertake
and how they will behave during their stay.
Gastronomic animation is undoubtedly an important factor in increasing the tourist offer, a key
factor for branding the tourist destination with a decisive impact on the quality of tourist visits
and the length of tourist stay and of course with significant economic and social benefits for
Macedonian tourism.
This doctoral dissertation is a modest contribution to the development of scientific thought with
new truths and knowledge that have practical applicability in the interest of enriching the tourist
offer and development of new tourist destinations in our country
